Advantages over analogues: First developed original fermented beverages based on honey and other natural ingredients . Due to the peculiarities of the technology used and new cultures of microorganisms honey fermented beverages as compared to global peers have high consumer characteristics . The developed technologies are energy and resource efficient , allow the use of existing equipment at the enterprises of food industry nonalcoholic beer and wineries . High-performance cultures of microorganisms can intensify the technology of fermented beverages and get a finished product with high organoleptic properties .

Technical and economic effect: Economic feasibility of the development is to expand the range of fermented products by increasing the number of natural drinks on the market with different ethanol content.

Technology offers soft , low-alcohol and alcoholic drinks honey obtained by fermentation of an aqueous solution of honey and other natural ingredients that are like kvass , beer and wine are the products of alcoholic fermentation of aqueous solutions based on natural honey. The wort is fermented with pure cultures of yeast, for the preparation of a beverage and more cultures of lactic bacteria. As the main raw materials used by different types of honey . To extend the range provided the use of natural raw materials of vegetable origin, in particular , food processing fruits and berries, crops, aromatic and medicinal plants. Ready drinks contain biologically active substances used honey and natural raw materials. Also, because of enzymatic bioconversion in fermentation produced substances urgently needed by the human body : the essential amino acids , organic acids, vitamins, growth substances . Produced valuable and useful to the human body substances can not only improve the biological value of the finished product , but also to exclude from their composition exogenous dietary supplements - Sources of alien chemicals.
