The most promising alternative to traditional natural sugar of sugar- starch in the world recognized glucose-fructose syrup . Based on experimental studies demonstrated the efficacy of HPS in the formulation of bakery products and their optimal dose . Found that the dough from the GFS is advisable to prepare a traditional sponge method . Effective use of this sugar-containing raw materials at an accelerated method of preparation of the test and at the stage of activation of yeast. It is established that provides a more pronounced GFS , compared to sugar , the influence on the retardation of staling process products confirmed that increasing the hydrophilic properties of the crumb product with GFS , increasing their content of water-soluble substances krohkosti decreasing , increasing proportion of tightly bound water. In vitro studies revealed that the introduction of HPS and MT does not affect carbohydrate load on a human body and improves the digestion products of protein substances . The studies proved the feasibility of using GFS domestic production of sugar as raw material in the baking industry to improve the product range and expanding the resource base , the possibility of their use in the manufacture of bakery products to replace sugar
