One of the challenges of modern agriculture is to determine the particle size of milk, their size distribution Depending on the homogenization temperature, level of fat and milk dilution. Dependence of the intensity of the scattered light of the observation angle measured at the facility that implements the method of optical spectroscopy bias. The sample with the test milk directed focused laser radiation. The sample was mounted on a goniometer having a photodetector, a temperature controller, a peristaltic pump, a stepper motor control system. The output signal of the photodetector is fed to the input of the correlator associated with the computer and printer. The samples were used solutions of milk, lactose, milk powder, milk mixture. At the first stage of the research determined the particle distribution function of milk in size. A common feature of this distribution is the particle size range from 0.1 to 2.1 microns, and the presence of two peaks of unequal intensity. The latter fact can be explained by the fact that we were used to non-homogenized milk at room temperature, when bleeding the fat globules and the formation of clusters. Development is proposed in the form of guidelines.
