Purpose of the development: The new drug is designed to stabilize the wine products to improve the quality and increase in terms of stability.

Recommended application field: Winemaking.

Advantages over analogues: A new formulation of gelatin - enozhelatin for winemaking.

Technical and economic effect: Economic benefits from the introduction of the development is 150-220 UAH. 1000 gave the wine.

The main reason for the colloidal haze wine is the presence of the labile fraction of biopolymers wine and their complexes. To avoid colloidal haze often used auxiliary materials (gelatin, bentonite, colloidal solution of silicon dioxide), the effectiveness of which depends on the functional properties of the resulting structure, composition, or the presence of reactive groups of these agents. Established drug gelatin - enozhelatin for winemaking, developed modes and parameters of the production technology (Patent of Ukraine). It has improved functional properties, resulting from an increased content of the above-mentioned reactive groups (1.5-2 times higher compared to their content in edible gelatin GOST 11293). It is possible to increase its interaction with tannins of wine and processing efficiency, reduce dose and mineral sorbents that are used in the processing of complex wine, and the amount of sludge production (average 21%) and to ensure long-term stability vinoprodukta. Developed production technology enozhelatina introduced into production. The drug is available as a dry powder which dissolves rapidly in cold water and does not require any additional preparation (swelling), and a solution suitable for direct application in winemaking. Developed and approved technological instruction (TI In 00418030-14-2011), technical conditions (TU 24.6-00418030-006 2001), carried out sanitary-epidemiological examination of a new product and a positive conclusion. The technology of using enozhelatinu in winemaking for the treatment of white, red table and fortified and sparkling wine. Held its production testing and implementation in wineries (DK "LOD" Massandra ", PJSC" Odessavinprom "). Application enozhelatina carried out in accordance with technological instruction, approved by the Ministry of Agrarian Policy and Food of Ukraine (TI 00011050-1272-2011).
