In recent years, scientific thought by many scientists around the world focused on the synthesis of new substances that have specific functional properties beneficial to human health. Aubazidan - one of these substances. Studies of Ukrainian scientists found aubazidana property as an effective protector of radioactive elements to the human body. Biomedical research aubazidana samples confirmed the feasibility of its use in food products. By directed selection received high strain Aureobasidium pullulans, under which created the technology of production of microbial polysaccharide aubazidana. The technology includes microbial synthesis aimed at aubazidana optimized enzymatic environment, technological regime aubazidana concentration, as well as a method of separating the desired product, to produce podukta. Taking into account the physico-chemical and functional properties aubazidana developed novel foods and food concentrates, confectionery, dairy and meat products.
