DIELECTROMETRY OF MILLIMETER RANGE TO DETERMINE THE AUTHENTICITY OF TABLE WINE AND JUICE


Purpose of the development: Solving the problem of naturalness (authenticity) wines and juices by measuring the complex permittivity (CDP) of fluids in the millimeter wavelength range in which the maximum observed frequency dispersion of the water (the main component of wine and juice).

Recommended application field: Winemaking. Solving one of the most significant problems of monitoring the quality of wines - identifying counterfeit products associated with the addition of water, so the new device can find its application for high-precision rapid control of water concentration in the wine and fruit juices. Our customers are: 1) The plant secondary winemaking and sparkling wines for which the primary raw material (wine materials) supplied by the primary wine (wine material is the product of fermentation of grapes); 2) laboratories (centers), government and industry regulatory bodies; 3) The regional offices of the State Tax Administration and sellers of products of winemaking.

Technical characteristic: Key technical features of the instrument to address the problem of identification of natural wines and juices - high differential sensitivity in the frequency range (the difference relative permittivity of two strongly absorbing liquids, which can be detected by the device) that does not exceed 0.1%, compared to the same few drops water in a glass of wine.

Advantages over analogues: The device is able to detect the smallest amount of water added in comparison with the number of known physical and chemical methods and requires up to five minutes to complete the analysis of the staff with a low level of qualification and relatively low financial costs. Currently on the market there are no instruments for monitoring water added in wines and juices, whose operation is based on the principles of dielectrometry, although scientific research in this direction is underway. The device is easily transportable, allows you to use a smaller amount of liquid that is investigated.

The development stage readiness: Ready for application

Technical and economic effect: After the introduction of quality control technology of wine positive changes will occur to the public at an appropriate level of control over the quality of products. Increase the probability of use by citizens of natural wines and juices, and not dissolved water surrogates. Increase demand for quality Ukrainian wine and juice. Increase the share of taxes on the wine industry, which can be used by the Company in general for their needs.

The idea of the proposed technology is to use depending on the physical index - permittivity of wine or juice on the concentration of a number of substances, which are components of wine (juice). Firstly, the design has been established by the authors that the overwhelming majority of the reduction in the concentration of substances resulting in a decrease of the dielectric constant in the microwave range and thus creates conditions determining trace impurities in water or wine juice. Second, the authors have invented a new method of measuring the dielectric constant of strongly absorbing liquids. It is based on a new principle of constructing an electrodynamic measuring cell and provides a high differential sensitivity (relative permittivity difference between the two liquids, which can be detected by the device does not exceed 0.1%). Detection Technology of added water in wines and juices that are offered, belongs to a class of instrumental physico-chemical methods, and therefore is an objective, capable of detecting the minimum amount of water added, requires little time to complete the analysis of personnel with secondary creature. The device that implements this technology is mobile and has a significantly lower price compared with nuclear magnetic resonance spectrometers. New factor here are the high metrological characteristics of the instrument and reasonable price. The apparatus comprises two identical cells, which are arranged in the dielectric rods. One cell contains the liquid which is investigated, and the other - the reference fluid. Each cell is connected to the input and output waveguides via rectangular wave types of converters. The structure of the measuring device allows to calculate the absolute values of CDP fluid is studied using the characteristic equation of wave propagation in the dielectric rod, which is in the fluid from the measured values of attenuation and phase difference of waves in a cell unit if known reference liquid KDP. Prior to the rapid diagnosis should be familiar with how to measure. This requires demonstration tests on control samples to detect falsification according to the accompanying instructions for use. To start the measurement, you must fill out a single cell liquid, which investigates and the other - a reference fluid. Was a prototype №1 dielectrometer which has been tested by the National Institute of Vine and Wine (NIViV) "Magarach", Yalta, Crimea, Ukraine, where the technique was developed its application. On the basis of the tests it was concluded that dielectrometer can be used for rapid diagnosis of the authenticity of wines and juices. On the basis of test protocols have been developed guidelines for the use of CD dielectrometer number 00384830.058-2010 in NIViV "Magarach".
