The technology of production of functional physiological ingredients based on waste products - wheat and rye bran through biotechnological treatment of alpha-amylase (from Bacillus subtilis), glucoamylase (from Aspergillus awamori), protease (from Bacillus subtilis) and multienzyme drug Viscozyme L (from Aspergillus aculeatus) having glucanase, xylanase, and cellulose pektinesteraznoyu activity. They were selected enzyme preparations, which are able to actively influence the degradation of complex polisubstratnogo bran - alpha-amylase, glucoamylase, protease, multienzyme drug Viscozyme L, and the optimal conditions for enzymatic hydrolysis of wheat and rye bran. Characterized biochemical composition and physiological properties of the fermentative wheat and rye bran, proving the feasibility of using biomodifikatsii methods to extract carbohydrate-protein mixture, polyphenols, xylooligosaccharides and activated dietary fiber. Optimized process parameters enzymatic hydrolysis of wheat and rye bran. Developed and economically feasible technology for carbohydrate-protein concentrate, syrup BAS preparation xylooligosaccharides and polyphenol preparation. Biomedical research proved the safety and efficacy of the drug as an anti-oxidant polyphenols.
