Purpose of the development: Modified fats of a new type can be used as components of prophylactic and health food products, and thus make a significant contribution to the solution of the problem of improving the population of Ukraine.

Recommended application field: Food industry. Equivalents of fats in the composition of bakery, confectionery and fat-containing products.

Advantages over analogues: In the world practice there are no examples of the use of ethyl esters in food products, but there are medicines containing ethyl esters of fatty acids, in particular polyunsaturated. Modified fats of a new type are advisable to use, taking into account the following advantages: - improving the quality of food products and excluding the presence of trans-isomers of fatty acids in their composition; - enrichment of fat systems with ingredients, do not cause an increase in the level of low density cholesterol in the blood plasma and do not take part in the processes of resynthesis of fats in the human body; - absence of influence on organoleptic evaluation (smell, taste) of food products; - nontoxicity.

The preparation of modified fat with the desired melting point and other physico-chemical properties by the conversion (partially or completely) of acylglycerols (fats) to ethyl esters of fatty acids. Such a result is achieved by the beta- nolysis of natural or fully hydrogenated fats using enzymes or other catalysts. This allows to enrich the modified fats with the ingredients of prophylactic-health use (incomplete acylglycerols, ethyl esters of fatty acids), and also reduce the content of saturated fatty acids in foods that cause the accumulation of low-density cholesterol (myristic, lauric, palmitic) in the blood plasma and replace them with ethyl stearic acid esters, which, according to FAO / WHO, do not cause adverse effects.
