The developed method for the isolation of black pigment - plant melanin - by high-speed alkaline extraction of fermented sunflower husk. It is shown that the preliminary holding of the milled husks in an aqueous alkaline solution with pH = 9 increases the yield of the pigment as compared to extraction without exposure from 0.87% to 3.0%. The product obtained is a black powder with a moderate solubility in water. Melanin pigments are characterized by a distinct EPR signal with a concentration of paramagnetic centers of 2.6 * 1017 spin / h. Due to the developed system of communication. Characteristic features of the pigment are its powerful photo- and radioprotective properties, combined with the ability to complex formation with metal ions.
