The developed technology for the production of collagen from wastes of tanning production is characterized by optimal time extraction, the absence of harmful impurities and a significant amount of product. After isolating the non-collagen proteins, the collagen was extracted with acetic acid. The dynamics of collagen extraction was studied at the main stages of extraction. The purity of the product is confirmed by the results of polyacrylamide gel electrophoresis, and the amount of protein obtained is determined by the modified Lowry method. The obtained proteins with a molecular mass of ~ 110,117, 120, 235 and more. The presence of a1 (I) - monomer chains, b11 (I), b12 (I) - dimer chains, in (I) (various combinations) - trimeric chains is proved. Collagen extracted after 24 hours is characterized by greater purity due to the lower background of observation. Analysis of proteins in the supernatant revealed the possibility of further hydrolysis to obtain low molecular weight fragments of chains.
