PROBIOTIC PREPARATION FOR SOURCEING OF VEGETABLES


Purpose of the development: The probiotic preparation for fermentation of vegetables is developed on the basis of Lactobacillus plantarum lactic acid bacteria strains.

Recommended application field: Food industry.

Technical characteristic: The strain of lactic acid bacteria Lactobacillus plantarum.

Advantages over analogues: The drug is safe for people, animals and the environment. The drug can be used for souring cabbage, cucumbers, tomatoes and other vegetables. The use of the drug allows you to get a finished product of guaranteed quality, the use of which improves the state of health of the animal and the probiotic actions of its main components.

The preparation contains biomass of lyophilized cells. The introduction of the drug during the fermentation of vegetables reduces the time of receipt of the finished product due to the rapid achievement of the desired value of acidity, improves organoleptic characteristics and prolongs the shelf life. This is ensured by the ability of L. plantarum strains to grow rapidly in the vegetable medium and their resistance to high NaCl concentrations (up to 8%). The rapid decrease in pH due to the accumulation of lactic acid prevents the development of undesirable microorganisms, including pathogens. L. plantarum strains exhibit antagonistic action on phyto-pathogenic bacteria, such as Pseudomonas syringae, Pseudomonas fluorescens, Pectobacterium carotovorum, Xanthomonas campestris, Clavibacter michiganensis, Agrobacterium tumefaciens. The probiotic effect on the human body of vegetables fermented with the use of the drug is due to the biological activity of the strains, which are its main components. The strains of L. plantarum exhibit a broad spectrum of antagonistic activity against conditionally pathogenic microorganisms, such as Pseudomonas aeruginosa, Staphylococcus aureus, Escherichia coli, Bacillus cereus, Klebsiella pneumoniae, Salmonella enterica, Shigella sonnei, Shigella designer, Shigella designer, Shigellagrandygrandygrandygrandygrafen, and Shigella sonneegrandigrandigrafeniograi. Strain L. plantarum detects total antioxidant activity. L. plantarum strains are capable of adhering to human intestinal epithelium cells and have a high potential for biofilm formation, resistant to the conditions of the gastrointestinal tract, and non-pathogenic.
